1 French baguette
1 cup pureed avocado
½ cup grated parmesan cheese
3 tablespoons minced garlic
Topping
3 tablespoons garlic olive oil
2 tablespoons traditional balsamic vinegar
6 Roma tomatoes
½ cup fresh basil leaves, minced
½ cup chopped fresh mozarella cheese
3 garlic cloves, minced
Preheat oven to 450°F
To prepare bread, combine the pureed avocado, Parmesan cheese, and garlic then spread on each slice of French bread. Put the bread slices on a baking sheet and are for about ten minutes, until golden brown. Remove from oven.
To prepare topping, combine the olive oil, vinegar, tomatoes, basil, mozzarella, and garlic. Stir well. Serve in bowl surrounded by bruschetta slices.
